Surprisingly, Piper-Heidsieck chose 2007 to make the first rose champagne in the prestigious Rare range, given that 2007 was described by Champagne producers as a troubled and atypical year. However, the choice of Régis Camus was an inspired one.

Rosé Millesimé Rare 2007 has a golden-pink color with copper iridescence.

Rare-Rose is based on 56% Chardonnay and 44% Pinot Noir, which gives it complexity and freshness at the same time. It is a champagne that surprises you with a fine, elegant and silky perlage. It opens with notes of baked bread, white cherries and orange flowers, it surprises you with notes of exotic spices and strawberries, then giving way to intense floral aromas. It has a pleasant minerality and an acidity that enriches its taste with pomegranate aromas, pleasantly topped with vanilla, toast and fine notes of licorice and dry grass. It is a refined and elegant champagne, with a harmonious texture and a long fragrant finish.

Rare Rosé Millésime 2007, was released in a limited edition in 2016, after 8 years on yeast
